TIRAMISU | (Emanuela's Italian marvel) | |
In Emanuela's own words: Ingredients: - 500 gr. Mascarpone (it is a sort of Italian cream cheese that you can
find everywhere!)
Divide the eggs, the red from the whites. Whip up the withes until it becomes very fixed. In another bowl mix the red with the sugar and the mascarpone and when it becomes soft and homogeneous add to that the whites already whipped. The cream is done! Now prepare the coffee (of course espresso is better but you can also use instant coffee) and if you want you can add to it a bit of Marsala or Rum. Dip a little bit the savoiardi in the coffee and then in a rectangular plate make one layer of savoiardi followed by one of cream and then again one layer of savoiardi and another of cream. Last thing, a little bit of cocoa powder on the top if you like it! The tiramisu is ready!!! The final secret is that before eating it you should leave it a whole
night in the fridge! _______________________________________________________________ HS comments: when you add the whites to the mascarpone/reds, you should not stir but only gently turn everything with a spoon in order to avoid whipping out the air. It can't hurt to do the coffee in advance; "cup" means a big one or even two. |
